We’d be prone to fall victim to the January blues, were it not for one delicious, incredible thing—the promise of Girl Scout Cookie season. We’re always the first  to order approximately one metric ton of the treats, starting with Thin Mints (the irrefutable best cookie), followed by Samoas (a respectable second), Tagalongs, and Trefoils.

And while it’s perfectly respectable to (ahem) go through a sleeve or two in a single sitting, why not do a little remixing of a classic? Did you know, for instance, that with a little flour, butter, and creativity, you can turn that Thin Mint into a Thin Mint Truffle Brownie? Shortbread cookies make a great foundation to a kickass raspberry cheesecake. And that’s just the beginning.
