I’m the least picky eater you’ll ever meet, but I’ve never really been down with carrots. I’m fine to munch on a few at a party if all the celery’s gone from a crudité platter or when they come with a side of ranch dressing (and a plate of spicy wings, preferably), but overall, I’m not someone who’d ever willingly seek out carrot recipes to make myself.
That changed recently when I had some friends over for dinner and decided to make a few different sides. I settled on the Garlic Roasted Carrots from food blog Damn Delicious, and—whaddaya know—they were actually damn delicious.
There’s something about eating the veggie when they’re cooked with interesting herbs and spices that I responded to, and have since been seeking out other carrot recipes to try. Here, 15 I’m planning on pinning to my food board (aptly called “Yumz” in case you’re interested.)
